TUSCAN PECORINO CHEESE

 

 

Pecorino has ancient origins that go all the way back to the island of Sardinia, in the middle of the Mediterranean sea. There in the high mountains of central Sardinia, shepherds have been making Pecorino cheese for centuries until the economy became to falter and were forced to move to the mainland. These shepherds found the rolling hills of Montalcino and Pienza, the perfect territory where their sheep could graze and eat the sweet grass.

The result is a complex and sweet tasting cheese when is fresh, that becomes more intense and crumbly in texture with aging.
